Embark on a journey to the shores of Fiji with our premier release from the South Pacific Distillery, nestled in Lautoka and established in 1980. This distinguished distillery, now a subsidiary of the esteemed Fosters group, boasts a legacy steeped in craftsmanship, operating both pot and column stills to produce an array of rum styles—ranging from light, easy-going expressions to intense, full-bodied, Jamaican-like funky beasts.
This 2001 vintage Fiji 100% pot still rum, a testament to the distillery's artistry, underwent a meticulous aging process. Initially tropically aged for 2 years and subsequently continentally aged for a further 19 years, this expression matured in an ex-rum barrel before being bottled in 2023 at an inviting 47.3% ABV.
Limited to a mere 222 bottles, each encapsulates the essence of Fiji's rich rum heritage. The marriage of traditional pot still distillation and extended aging has crafted a symphony of flavors and aromas, inviting enthusiasts to savor the complexity and depth inherent in every sip.
This special release comes accompanied by a bespoke presentation box and a coaster, elevating the experience and celebrating the essence of Fijian craftsmanship. South Pacific Distillery - The Colours of Rum No. 1 Cask #17 - 2001 stands as a testament to the diversity and excellence of Fijian rum, inviting connoisseurs to indulge in a rare and exclusive expression from the heart of the South Pacific.
