Distilled from pure Mauritian sugar cane juice, using a unique blend of red and yellow sugarcane varieties from Mauritius, this XO matures for a minimum of six years in a carefully balanced combination of sweet wine, new oak, Bourbon, Cognac, and new American oak barrels. Production begins with fresh first-press sugarcane juice, followed by cool fermentation at 18–20°C for 8 to 14 days to preserve freshness and aromatic clarity. Distillation takes place in small batches of 400 liters using four hybrid copper stills equipped with catalytic converters, producing a distinctive distillate at approximately 80% ABV. The rum is filled into casks at 70% and left to mature slowly, allowing complexity, structure, and balance to develop naturally over time.
